For the Marinated Pork
4 Pork shoulder steaks, cut into strips
1 Teaspoon ground cumin
1 Teaspoon ground smoked paprika
2 Garlic Cloves
1 Teaspoon of Oregano
1/2 Teaspoon of Thyme
A Pinch of Salt and Ground Black Pepper
2 tablespoon vegetable oil
For The filling
1 Red Bell Pepper
1 Small Onion
For Building the Tacos!
1 Small Lettuce, Thinly chopped
1 x Jar of Mild Tomato Salsa
1 Small pot of Low Fat Greek Yogurt
1 x Handful of Fresh Coriander, Roughly chopped
8 x Taco Shells – soft or crunchy, you choose!
Chef's Tip
Always wash your hands very well before cooking or baking.
You can use our recipe for flatbreads in place of taco shells, and you can also serve these with chunky chopped Avocado, or even home made guacamole!
Step 1
Prepare your vegetables! Wash the veggies, then thinly chop your lettuce and put in a bowl. Thinly chop your pepper, peel and thinly chop your onion and get aside.
Step 2
In a bowl, mix all the ingredients for the marinated pork in a mixing bowl. Add the pork slices, coat it well with the herbs and spices and set aside for 10 minutes to marinate.
Step 3
Meanwhile put the salsa, low fat greek yogurt, chopped lettuce and coriander into separate bowls ready for serving.
Step 4
Heat a frying pan to medium hot, add the pork and fry until golden brown for a few minutes until cooked through. You can leave the pork to sit in the park for 10-20 seconds without stirring it, this helps it get a nice brown colour! The add your Pepper and onion and stir fry for another 3 minutes, or until cooked through.
Step 5
Warm the tacos by following the instructions on the packet.
Step 6
Arrange the taco shells or tortillas on a plate and spoon the pork and vegetable mix into a serving bowl and let your guests build their own tacos from each of the bowls!
